One of my favorite appliances in my home is my Air Fryer, and if you have one (or 2 Air Fryers like me), you know why! I do love a good ole fried chicken, but I try to limit how often we deep fry. The oil fry smell that lingers in my house for days after frying is the worst.
The SECRET to crispy Garlic Parmesan wings without deep frying is not OIL....it's... BAKING POWDER!
It is very important to use aluminum free baking powder, not baking soda which is usually in an orange box. The baking powder helps draw out the moisture from the skin which results in a crispy Garlic Parmesan wing!
If you don't have an Air Fryer don't worry, this recipe can easily be done in an oven as well!
If you are using an oven, Place the chicken on a metal cooling rack in a baking pan. Make sure to line the pan with foil to assist with cleanup! Cooking the chicken on the metal rack will help air circulate around the wings and let the oils and juice drip away from the chicken. Cook the chicken on the middle rack in the oven at 250 for 30 minutes and flip halfway. This low heat will draw out the extra oils and moisture from the skin. Then, for the second half of cooking, bring the chicken up to a higher rack (middle upper) and cook at 425 for another 30-40 minutes until golden brown.

- 1 air fryer or oven
Ingredients
For the Chicken Wings
- 2 lbs Chicken wings (approx. 24 wings)
- 1 tbsp Baking powder Aluminum free (Not baking soda- orange box)
- ½ tsp Garlic Salt
- ½ tsp Black pepper
For the Garlic Parmesan sauce
- 3 tbsp butter
- 2 tbsp olive oil
- 1 tbsp minced garlic
- 1 tsp garlic salt
- 1-2 tbsp Parmesan Cheese
Instructions
For the Chicken Wings
- Cut the wings into Drums and Flats if they aren't separated yet.
- Dry the wings very well with a paper towel, this will ensure a crispy wing.
- Combine the dry ingredients, 1 tbsp Baking powder Aluminum free (Not baking soda- orange box), ½ tsp Garlic Salt, and ½ tsp Black pepper with the chicken wings.
- Preheat Air fryer to 380 degrees. Add in the chicken wings and cook for 20 minutes and flip halfway. *Try to avoid over crowding because this can prevent the chicken from cooking evenly and crisping up.*
- For the final 5-10 minutes of cooking, turn you air fryer up to 400 and flip half way. Cook until browned and crispy.
For the Garlic Parmesan sauce
- Heat a pan to medium low, and add 3 tablespoon of butter, and 2 tablespoon of olive oil
- Once the butter has melted, add in 1 tablespoon garlic, and 1 teaspoon garlic salt. Cook 5 minutes until the garlic until fully cooked and lightly browned.
- Toss the chicken and butter sauce in a bowl, and top with parmesan
- Enjoy!
Notes:
- Dry your wings very well before seasoning to ensure a crispy wing!
- Most wing recipes use all butter, but I found that cutting the butter in half and adding a bit of olive oil does not compromise the taste at all! If you want to use all butter, 2lbs of wings should need about 6 tbsp.
- Be sure to use baking powder that is aluminum free and not baking soda (orange box)
- Cooking the chicken on a wire rack inside the air fryer will result in a crispier chicken wing. The wire rack promotes air circulation and helps the juice drip away from the chicken
- For this recipe I used unsalted butter, and garlic salt. Regular salt is saltier than garlic salt, so when you are making the sauce, send a sacrificial tester wing into the sauce and try it before adding 1 full teaspoon of regular salt if you are using that.
