This Hot & Sour Dumpling soup hits the spot when you are craving something a little Spicy & Sour. This soup paired with dumplings is just so good when you are craving something packed with flavor and either don't have the time or want to spend extra time to satisfy that craving. If you have had spicy wontons before, this is similar but slightly more sour, and much more hearty since it is made with dumplings versus wontons.

This type of dumpling soup originates from the Shannxi province in China.While we have all seen dumplings, either pan fried or boiled it is not as common to find dumplings in a soup. These dumplings are known as the Shannxi Suan Tang Shui Jiao , ้ ธๆฑคๆฐด้ฅบ, Which translates into sour soup dumplings. This spicy and sour soup base infused with aromatics is a very common and popular flavor combination in the Sannxi area.
๐ฅ Ingredients
- frozen dumplings
- garlic (minced)
- Soy Sauce - Low Sodium
- dried shrimp
- black vinegar
- sesame oil
- chicken powder
- cooking liquid from dumplings
- water for boiling dumplings
Garnish
- 5 stems cilantro (sliced)
- 1 stalk green onion (sliced)
- 1 tsp fried garlic
- 1 tbsp Szechuan chili oil
๐ช Instructions
- Boil water and cook dumplings according to package directions. Stir the dumplings after 1-2 minutes to ensure it doesn't stick to the pan.

- Into a soup bowl combine : ยฝ tablespoon garlic (minced), 1 tablespoon Soy Sauce - Low Sodium, 1 teaspoon dried shrimp, 1 teaspoon black vinegar, 1 teaspoon sesame oil, 1.5 teaspoon chicken powder, 5 stems cilantro (sliced),1 stalk green onion (sliced), 1 tablespoon chili oil
- Once the dumplings are done, scoop out โ cup of the cooking liquid, and add to your soup bowl.
- Strain the dumplings and add to your soup bowl. Garnish with garlic and extra chili oil.
Hint: This recipe generally calls for "Spiced Vinegar" and beef dumplings, but using a Szechuan based chili oil will cut our prep time in half!
Spiced Vinegar is black vinegar that has been steeped with the usual 5 spices (Star Anise, Fennel Seeds, Cinnamon Stick, Whole Cloves, Szechuan Peppercorns). To save time on this recipe, and without sacrificing the taste, I use Szechuan chili oil which I feel enhances the over all taste of this dish. I love this tapped chili oil! - Dumplings: If you don't have dumplings, you can substitute with wontons, rice noodles, or even cooked rice
- Vinegar: While black vinegar is commonly used, you can substitute it with white vinegar or apple cider vinegar if needed.
- Soy Sauce: You can use tamari or coconut aminos as alternatives.

- Non Spicy - If you do not like spicy, you can leave out the Szechuan chili oil and just add a pinch of 5 spice powder to your black vinegar. Even without the spice this soup will be super hearty and flavorful!
- Vegetarian - Use a vegetarian dumpling and vegetable soup broth
