Ingredients:
For The Rice Soup
- 1 lb Chicken
- 1 cups Rice
- 4 cups hot water for the rice & 4 cups water to cook chicken
- 1 Onion
- 2 Shallots
- 1 piece Ginger
- 1 cube Chicken bullion cube or 1 tablespoon Totole Chicken Powder
- 1 tsp Fish Sauce (optional)
- Salt and Pepper (To taste)
For the Garnish
- 4 stems Cilantro
- 1 bunch Green Onion
- 1 tsp Fried Garlic
- 1 tsp Chili oil (Optional)
Instructions
- 1. Add chicken , peeled whole shallot, peeled whole onion, knob of ginger and chicken bullion to pressure cooker and cover with 4 cups hot water (or room temp)
- 2. Cook on high for 8 min and 5 min NPR (Natural pressure release) , then release the rest of the pressure manually.
- 3. Remove onions, shallots and ginger and toss it
- 4. Remove chicken and set aside in a bowl to cool
- 5. Add 1 cup of washed rice, and 4 cups of hot water into the pressure cooker pot containing the chicken broth.
- 6. Cook for 18min on high with full NPR (Natural pressure release approx 30min)
- 7. While the porridge is cooking, Shred the chicken and prepare your garnish
- 8. When the porridge is done cooking, give the pot a good stir because some of the rice will be sticking to the bottom of the pan.
- 9. To serve, scoop porridge into a bowl and top with chicken and your choice of garnishes
- 10. Enjoy!

Pressure Cooker Recipe
- 1 lb Chicken
- 1 cups Rice
- 4 cups hot water + 4 cups water to cook chicken
