Instructions
This recipe calls for hot water to speed up the cooking time but regular water works too.
Add chicken , peeled whole shallot, peeled whole onion, knob of ginger and chicken bullion to pressure cooker and cover with 4 cups hot water (or room temp)
Cook on high for 8 min and 5 min NPR (Natural pressure release) , then release the rest of the pressure manually.
Remove onions, shallots and ginger and toss it
Remove chicken and set aside in a bowl to cool
Add 1 cup of washed rice, and 4 cups of hot water into the pressure cooker pot containing the chicken broth.
Cook for 18min on high with full NPR (Natural pressure release approx 30min)
While the porridge is cooking, Shred the chicken and prepare your garnish
When the porridge is done cooking, give the pot a good stir because some of the rice will be sticking to the bottom of the pan.
To serve, scoop porridge into a bowl and top with chicken and your choice of garnishes
