This one pot chicken and rice dish is one of my favorite go to comfort meals. I love how easy and fast I can get this one pot chicken into the oven without tending to a stove. Of course the best part other than not babysitting a stove is jut the one casserole dish to wash.

Ingredients for One Pot Chicken Rice:
- 2 cups white rice (uncooked)
- 2 cans cream of mushroom soup
- 1 pack French Onion soup mix
- 2 cups chicken broth
- 4 chicken thigh (skin on bone in)
- pinch of salt
- pinch of black pepper
- pinch of paprika
- shredded cheese (garnish)
Instructions
- **preheat oven to 350 10 mins before you start prepping
- 1. Add 2 cups of rice to casserole dish
- 2. Add 1 pack of French Onion mix to the dish
- 3. Combine 2 cups of chicken broth and 2 cans of chicken mushroom soup and mix well
- 4. Add broth and soup mixture to the rice
- 5. Top with Chicken
- 6. Season chicken with salt pepper and paprika
- 7. Cover with foil and bake at 350 for 1 hour
- 8. Remove foil after 1 hour and bake uncovered at 400 for 10 minutes
- 9. Sprinkle with cheese
- 10. Enjoy !
