Have you had LEMONGRASS before?
Lemongrass has a very fragrant smell and a slightly floral, and citrus taste. Lemongrass also has some chew to it so its best to mince finely if using fresh lemongrass. If you are not sure if you like the taste, start off with a smaller amount in your first batch to try out.
Prepared Lemongrass is sold at most Asian markets in the freezer section.
Did you know you can buy pre minced or sliced lemongrass at most Asian markets? I was mind blown when I made this discovery. Buying frozen prepared lemongrass has been a huge time saver, and I recommend keeping a small tub or bag on hand.
How do I prepare fresh Lemongrass?
Minced lemongrass is the best in marinated meats. Remove a few of the outer leaves and discard and use the more tender leaves on the inside. Also remove about 2-3″ of dried leaf tips from the top and also 1″ from the bottom. If you have a food processor, you can quickly mince the lemongrass, and freeze and save the rest for later.
Ingredients
Lemongrass Grass Beef
- 1.5 Beef (Cross Rib Roast) Tri-Tip, Ribeye
- 1 tbsp Shallot (minced)
- 6 cloves Garlic (minced)
- 1 ½ tbsp Lemongrass (minced)
- 1 tbsp Oyster Sauce
- 1 ½ tbsp Fish Sauce
- 1 tsp Soy Sauce
- ½ tsp Sugar
- ½ tsp Black Pepper
- ½ tsp Kosher Salt
Banh Mi & Garnishes
- 4 Banh Mi Bread or Bolillo Bread
- 4-8 tbsp Vietnamese Mayo
- 2 Jalapeños (Sliced)
- 1 Cucumber (Sliced)
- ½ bundle Cilantro
- 8 tbsp Pickled Carrots & Daikon
Instructions
Lemongrass Beef:
- Thinly slice beef and add to a mixing bowl (If you freeze up the meat for 45 minutes it will be easier to slice)
- Mince garlic, Shallots and Lemongrass and combine with the beef and marinade ingredients: (1 tablespoon Oyster Sauce, 1 ½ tablespoon Fish Sauce, 1 teaspoon Soy Sauce, ½ teaspoon Sugar, ½ teaspoon Black Pepper, ½ teaspoon Kosher Salt)

- Mix together and optionally marinate for 30 minutes.
- Heat a pan to Medium/Medium high and sear meat on each side for 2-3 minutes until browned and cooked. Set aside and repeat until all the meat is cooked.
Banh Mi:
- Slice Banh Mi Bread vertically, but not all the way through. Optionally you can toast the bread if you like a crispy Banh Mi.
- While the bread is toasting, Slice cucumbers and jalapeños
- Time to assemble! Spread 1-2 tablespoon of Vietnamese Mayo on the bread, and top with Lemongrass Beef, Cucumbers, Jalapeños, Pickled Carrots & Daikon and Cilantro.

this is a great recipe although if you want more flavor i would marinate the beef overnight with an extra stalk of lemongrass
