Ingredients
- 4.5 lbs Spare Ribs ( Full Rack) or baby back ribs
- 2 tbsp Oil
- ¼ cup Cooking Wine
- 2 tbsp Honey + more to drizzle on top for a sweeter sauce (optional)
- 2 tbsp Soy Sauce - Low Sodium
- 1 tbsp Seasoning Sauce
- 2 tbsp Oyster Sauce
- 1 tbsp Hoisin Sauce
- 2 tbsp Dark Soy Sauce
- 3 tbsp Brown Sugar or Rock Sugar - Yellow
- 4 tbsp Rice Vinegar (Optional)
- 2 slices Ginger
- 4-5 pieces Garlic
- 2 pieces Bay Leaves
- 2 pieces Star Anise
- 1 stick Cinnamon
- 2 cups Water to cover the ribs
- 1 stalk Green onions - Garnish
- peppers sliced - Garnish (optional)
Instructions
- 1. Remove membrane for the Spareribs. Start at the corner of the thicker side of slab and use a paper towel to prevent it from slipping from your hands. (4.5 lbs Spare Ribs ( Full Rack) or baby back ribs)
- 2. Slice the Spareribs into individual pieces.


- 3. **Optional** Soak Ribs in water 10-30 mins to remove impurities


- 4. Heat a Large pot or pan to medium, add in 2 tablespoon of oil, and then add brown sugar or rock sugar. A large pot works best since we use minimal water to cover the ribs to braise, and need less evaporation time. (2 tablespoon Oil,3 tablespoon Brown Sugar or Rock Sugar - Yellow)
- 5. Use a non stick spatula to stir the sugar until it melts. Let the sugar caramelize just 2-3 minutes. Watch for burning.
- 6. Once the sugar is melted, Add in the spare ribs in a single layer if possible, and water to cover.
- 7. Add the rest of the ingredients : ( ¼ cup Cooking Wine, 2 tablespoon Soy Sauce - Low Sodium, 1 tablespoon Seasoning Sauce, 2 tablespoon Oyster Sauce, 1 tablespoon Hoisin Sauce, 2 tablespoon Dark Soy Sauce, 4 tablespoon Rice Vinegar (Optional), 2 slices Ginger, 4-5 pieces Garlic, 2 pieces Bay Leaves, 2 pieces Star Anise, 1 stick Cinnamon, 2 cups Water to cover the ribs, 2 tablespoon Honey + more to drizzle on top for a sweeter sauce (optional)
- 8. Simmer on Medium heat for around 1 hour and 15 minutes or until the meat is tender. Remove any scum that surfaces. While the ribs are cooking, slice your green onions and peppers if using.


- 9. Once the meat is tender, if there is still too much liquid, turn up the heat to medium high until the sauce thickens.
- 10. Garnish with green onions , Fresh peppers or chili oil.
- 11. Enjoy!

I made this recipe tonight and it was a hit! I had some extra baby back ribs from a barbeque a while back that I just never got around to preparing and I saw this recipe, decided to give it a go, and was very happy with the result. I had to make a few alterations/substitutions given what I had on hand (had to use powdered ginger instead of sliced root, minced garlic instead of the clove, and I didn't have any of the seasoning sauce so I just omitted), but I had everything else and prepped it as written. It was really easy to do, made the house smell amazing, and the ribs were super flavorful and could be easily pulled off the bone. My wife and 19 month old daughter loved it. I'll definitely be making it again!
Just a small note that if you're following the recipe, at number 7, don't forget to add the Hoisin and Oyster sauce (and Rice Vinegar if you have it/plan on adding it). It says to "add the rest of the ingredients" and if you're more clever than I and did your mise en place (aka have all your ingredients in front of you and ready to go), then you won't get confused about that step. I was a tad too literal referencing the ingredient list with the ingredient sheet at step 7 and wondering when to add the sauces. Add *everything* then and boil it down.
Pair it with some white rice and a green of your choice (sauteed broccoli with soy sauce, ground ginger, and brown sugar is an easy go-to for me) and you've got a delicious dinner ready to go. Another great thing about this dish is that all the prep work is pretty much entirely on the front end, so if you time the rice and side well, you can have the entire meal ready as soon as the ribs finish!
