Instructions
Remove membrane for the Spareribs. Start at the corner of the thicker side of slab and use a paper towel to prevent it from slipping from your hands.
4.5 lbs Spare Ribs ( Full Rack) or baby back ribs
Slice the Spareribs into individual pieces.
**Optional** Soak Ribs in water 10-30 mins to remove impurities
Heat a Large pot or pan to medium and add in 2 tablespoon of oil, then add brown sugar or rock sugar. A large pot works best since we use minimal water to cover the ribs to braise, and need less evaporation time.
Use a non stick spatula to stir the sugar until it melts. Let the sugar caramelize just 2-3 minutes. Watch for burning.
Once the sugar is melted, Add in the spare ribs in a single layer if possible, and water to cover.
Add the rest of the ingredients :
¼ cup Cooking Wine, 2 tablespoon Soy Sauce – Low Sodium, 1 tablespoon Seasoning Sauce, 2 tablespoon Oyster Sauce, 1 tablespoon Hoisin Sauce, 2 tablespoon Dark Soy Sauce, 4 tablespoon Rice Vinegar (Optional), 2 slices Ginger, 4-5 pieces Garlic, 2 pieces Bay Leaves, 2 pieces Star Anise, 1 stick Cinnamon stick, 2 cups Water to cover the ribs, 2 tablespoon Honey + more to drizzle on top for a sweeter sauce (optional)
Simmer on Medium heat for around 1 hour and 15 minutes or until the meat is tender. Remove any scum that surfaces. While the ribs are cooking, slice your green onions and peppers if using.
Once the meat is tender, if there is still too much liquid, turn up the heat to medium high until the sauce thickens.
Garnish with green onions , Fresh peppers or chili oil.
