If you are looking for an EASY, TASTY and QUICK weeknight dinner, this Gyudon Beef and Rice recipe is it!
This Gyudon, Beef and Rice recipe requires very little prep and cook time, and the best part is you don't need to cut the meat! I typically buy thin sliced beef at the Asian market so this dish comes together in no time. At the Asian market you can usually find the thinnest meats sliced and frozen in the Shabu Shabu meat freezer section. I usually buy 2 packs so I can throw one into the freezer for use for a quick emergency meal.

My FAVORITE part of this Beef and Rice dish aside from the flavor and the simplicity of it is that RUNNY EGG YOLK.
I'm a sucker for a nice runny egg yolk, and for me, that just makes this gyudon that much better. If you are not an eggy person or don't like runny yolk no worries! This beef and rice is still amazingly good and satisfying without the egg as well.

Ingredients
- 1 lb Thinly Sliced Beef (I used beef chuck)
- 1 Onion (Large or 2 small)
- 2 stalks Green Onions (1 stalk for garnish optional)
- 1 tbsp Oil
- 1.5 tbsp Dashi Powder (Hondashi Bonito Stock)
- 1 cup Chicken Broth
- ½ tbsp Sugar
- 2 tbsp Mirin Rice Seasoning
- 2 tbsp Sake or Mirin Cooking Sake
- 2 tbsp Soy Sauce - Low Sodium
- ½ tbsp Dark Soy Sauce
- Chili Flakes Shichimi Togarashi (optional)
Instructions
- Heat your pan to medium , and add 1 tablespoon oil
- Slice 1 large onion or 2 small onions and 2 green onions. Save half of the cut onions for garnish.
- Add the sliced onions and half of your chopped green onions into the pan.
- Into a mixing cup combine all the ingredients but the Beef and onions. Combine and mix, 1 cup chicken broth, 1 heaping tablespoon of Dashi powder (Hondashi Bonito Stock), ½ tablespoon sugar, 2 tbsp Mirin Rice Seasoning, ½ tbsp Dark Soy Sauce, 2 tbsp Soy Sauce - Low Sodium, and 2 tbsp Mirin Rice Seasoning
- Once the onions are aromatic, add the sliced beef and let it brown in the pan. (In the video I forgot to brown it since I got too excited to eat. So if you chose to skip the browning that is ok too!)
- Once the beef is browned, Add the sauce and make sure all the beef slices have separated.
- While the beef is cooking, prepare your egg. (If using)
- The beef should just take around 5 minutes to cook since it is so thin. Once the meat is no longer pink, it should be ready to eat.
- Serve over rice, and top with egg and green onion (optional)
