These Air Fryer Street Corn Ribs are SO EASY to make and fun to eat!
These Air Fryer Street Corn Ribs are always a hit. Air Fried Corn that is cut into a rib shape are a fun side dish, and snack that never lasts long in my house. Nibbling on corn like you would eat a rib makes it so much more fun and tasty than regular corn on the cob.
Another fun way to enjoy Air Fried Corn Ribs is by Adding your own toppings.
My favorite toppings for Air Fried Corn Ribs are like Mexican street style corn "Elote Style". This type of corn is usually slathered in Butter, Crema, Cotija Cheese, Hot sauce and Lime juice. For an extra fun twist and crunch, I also like to add crushed Flaming Hot Cheetos or Doritos. If you don't like all the extra additions, you can just brush on a little more butter after cooking and sprinkle some salt OR just enjoy as is!

Yes these yummy air fried corn ribs can also be made in an oven ! Bake your corn riblets in an oven at 375 for 25-35 mins.
Help! The corn is too hard for me to cut.
The core is a little hard to cut , and for a softer core you can microwave the entire corn with the husk still on in the microwave for about 1.5 minutes on high. Let the corn cool down a few minutes before taking the husk off and cleaning the corn. If you find cutting the long quarters of corn are a bit difficult, you can cut the corn in half and work with smaller segments of the corn.
Can I substitute any of the toppings with what I have at home?
The best part of this recipe is that you can substitute garnishes and adjust to your liking and use whatever ingredients you have available at home! The Mexican Crema can be substituted with sour cream or mayo, and the Cotija Cheese can be substituted with Feta cheese or Parmesan cheese. If you prefer parsley, you can also use that in place of cilantro.

Corn Seasoning
- 2 Corn on the cob
- 1 tbsp Melted butter
- ½ tbsp Olive oil
- ¼ tsp Paprika
- ¼ tsp Onion Powder
- ½ tsp Garlic Salt
Corn Toppings
- ¼ cup Mexican Crema + More for dipping (Optional)
- ¾ tbsp Cotija Cheese
- 1 Lime cut into wedges
- Valentina Hot Sauce
- ½ cup Flaming Hot Cheetos or Doritos
- 3-4 stems Cilantro (cut finely)
- Kosher Salt (to taste)
- Paprika
Instructions
- 1. *Tip on cutting the corn* If the core is hard to cut, microwave the entire corn with the husk still on in the microwave for about 1.5 minutes on high. Let the corn cool down a few minutes before taking the husk off and cleaning the corn.
- 2. If you feel comfortable with a knife and have one that is strong and sturdy , you can skip the first step of microwaving, and start by removing the husks and cleaning the corn
- 3. Lay the corn down horizontally and cut the tips and the ends off the corn so both sides are flat.
- 4. Stand the corn up vertically and begin to slice downwards. You can use your palm to push down or slap down on the knife, or knock the corn with the knife onto the cutting board. It takes a few tries to feel out which method works best for you. Be very very careful during this process!

- 5. After the corn is sliced in half, turn the corn towards you and slice again downwards into quarters.

- 6. Repeat until all the corn is quartered

- 7. Preheat your Air Fryer to 400
- 8. Melt butter in the microwave for 15-30 seconds in a bowl. Combine the corn seasoning ingredients:1 tablespoon Melted butter,½ tablespoon Olive oil,¼ teaspoon Paprika,¼ teaspoon Onion Powder,½ teaspoon Garlic Salt
- 9 .Use a brush or spatula to spread the seasonings on to the corn.
- 10. Add the seasoned corn into the air fryer at 400F for 10-15 minutes, flipping once halfway.
- 11. Garnish with your desired toppings. I love adding Mexican Crema, Cotija Cheese, Lime juice, Valentina hot sauce and of course Flaming Hot Cheetos!
