This 10 minute Golden Fried Rice is one of my favorite weeknight recipes along with my 20 minute Yaki Udon noodle , Baked Salmon Cups and 10 minute Spicy Peanut Noodles.
Golden Fried Rice recipe tastes very different from regular fried rice with a full beaten egg. The Golden color comes from the egg yolk coloring the rice, and flavoring it with richness.
I have kept this Golden Fried Rice Recipe simple, seasoned lightly to bring out the richness and flavors of the egg yolk.
The real star of this dish is the egg used. For this fried rice recipe I have chosen Organic Farm Fresh eggs which are fresher and richer in taste than the standard grocery store egg. If you can get your hands on farm fresh eggs I highly recommend it! Typically the farm fresh yolk is deeper in color and the flavor is unmatched. Do I HAVE to use DAY OLD rice to make Golden Fried Rice?
The short answer is NO! I have a few tricks to avoid using day old rice, and having to plan this delicious quick Golden Fried Rice recipe in advance. When making your rice, adding a bit less water (¼ cup less or so) helps cook a firmer rice thats perfect for fried rice. You can lay out the rice on a plate to cool down, or pop in the fridge for a few minutes as well too. When cooking the rice, cook just 2 cups at a time to avoid overcrowding , which will help any extra moisture escape. These steps will provide a perfect fried rice that is not soggy or clumping together.

Ingredients
- 2 cups Cooked White Rice Day old rice or fresh rice cooked with less water, brought to room temp
- 2 tbsp Cooking Oil
- 3 Eggs (Yolks & whites separated) (Farm Fresh is best for vibrant color and richest taste)
- 1-2 Chinese Sausage Optional
- ½ tbsp Soy Sauce
- ½ tbsp Seasoning Sauce
- ½ tsp Kosher Salt
- ¼ tsp Chicken Powder
- 2 stalks Green Onions (Sliced)
- 1 dash White Pepper
Instructions
- **If using fresh cooked rice, spread out rice on a plate to cool down**
- Wash and slice green onions, and slice Chinese sausage if using.
- Separate the egg yolks and add to rice. Reserve the egg whites in a bowl, beat and season with a pinch of salt.
- Combine the egg yolks well with the rice using a spoon or a spatula.


- Heat your Wok or pan to medium, and add in 1 tablespoon oil. Once the pan is heated, add in the egg and cook until almost done and remove from pan.
- Add in the sliced Chinese Sausage (if using) and cook 1-2 minutes, and remove.
- Add in another tablespoon oil and add in the yolk rice. Season with : (½ tablespoon Soy Sauce, ½ tablespoon Seasoning Sauce, ½ teaspoon Kosher Salt, ¼ teaspoon Chicken Powder, 1 dash White Pepper
- Mix together and cook for another 3-4 minutes and add back the cooked rice egg whites and sausage.
- Mix together again, and turn off the heat and add in the green onions. Give one final toss, serve and enjoy!
