Instructions
**If using fresh cooked rice, spread out rice on a plate to cool down**
Wash and slice green onions, and slice Chinese sausage if using.
Separate the egg yolks and add to rice. Reserve the egg whites in a bowl, beat and season with a pinch of salt.
Combine the egg yolks well with the rice using a spoon or a spatula.
Heat your Wok or pan to medium, and add in 1 tablespoon oil. Once the pan is heated, add in the egg and cook until almost done and remove from pan.
Add in the sliced Chinese Sausage (if using) and cook 1-2 minutes, and remove.
Add in another tablespoon oil and add in the yolk rice. Season with :
½ tablespoon Soy Sauce,
½ tablespoon Seasoning Sauce,
½ teaspoon Kosher Salt,
¼ teaspoon Chicken Powder,
1 dash White Pepper
Mix together and cook for another 3-4 minutes and add back the cooked rice egg whites and sausage.
Mix together again, and turn off the heat and add in the green onions. Give one final toss, serve and enjoy!
