This Nước chấm, Vietnamese dipping sauce, is so addicting you'll want to put it on everything, even your eggs!
This recipe is so easy it comes together just in minutes. Its something can be easily make as a quick dipping sauce, but also can be made as a bigger batch of to have on hand. The peppers and citrus do lose the flavor the longer they sit in the sauce. If you can, a fresh batch always tastes best.

How long does Nước chấm last?
If you are not using the lime, and just the vinegar, this dipping sauce should keep for a month in the refrigerator. I may or may not have consumed it after longer, but it definitely tastes better fresh. I would recommend making smaller batches more often than 1 large batch whenever possible.
Ingredients (*substitute "part" with any measurement like a teaspoon, tablespoon or cup*)
- 6 parts Warm Water
- 1 part Sugar
- 2 parts Fish Sauce
- ½ part Garlic
- ¼ part Rice Vinegar
- Thai Chili (Optional)
- Chili Garlic Sauce (optional)
Instructions
- Add warm water and sugar into a bowl. Mix well (6 parts Warm Water, 1 part Sugar)
- If you prefer a sweeter sauce, add another ½ part to 1 part more sugar.
- After the sugar has fully dissolved add in your vinegar, garlic and Thai chilis or chili garlic sauce (½ part Garlic, ¼ part Rice Vinegar, Thai Chili-Optional, Chili Garlic Sauce-optional)
- Add the fish sauce in slowly until your desired taste is achieved. (2 parts Fish Sauce)
- Taste and adjust as needed
Notes
* If 1 part = 1 tablespoon, you will end up with a little more than ½ cup of dipping sauce (this volume is usually good for 2-3 bowls of vermicelli)
* The recipe can easily be adjusted for larger servings to cater to a party or single servings if you just need to mix a quick dip.
* To better gauge how much sauce you are making, you can start by adding the warm water into your bowl first.
