What do I serve with Garlic Noodles?
I usually serve Lemongrass Chicken (Recipe here) or Cha Siu Pork (Recipe here) along side these flavorful garlic noodles. If I am really feeling fancy, I will whip up some cajun seafood, or garlic roasted crab as well. Since these garlic noodles are infused with savory asian flavors, it pairs perfectly any protein of choice.
Wait... These are Vietnamese Garlic noodles?
If you are a Californian or have visited a Vietnamese Fusion Restaurant before, you will have likely seen Garlic Noodles on the menu. We all have Chef Helen An to thank for combining these delicious Asian flavors into a savory umami Pasta dish for all us home chefs to try and replicate.
What of Noodles should we use for Garlic Noodles?
I have seen some recipes call for fresh egg noodles, and I have tried time and time again to replicate these results using those egg noodles. First, These egg noodles are $4-5 at the Asian Market, and they are extremely easy to over cook. Second, the egg noodles are too fragile, and also clump together. I really LOVE working with Spaghetti for this recipe because they are cost effective, and hold up very well during the cooking process. I am pretty sure this is what many local restaurants in my area also use.

Ingredients
- 16 oz Dry Pasta (I used Spaghetti)
- 3.5 tbsp Olive Oil
- 3 tbsp Butter **You can also add more butter for more flavor**
- 20 cloves Garlic (minced)
- ½ cup Pasta Water
Noodle Sauce:
- ½ tbsp Chicken Powder
- 1 tbsp Garlic Powder
- 1 tbsp Oyster Sauce
- 1 tbsp Maggi
- 1.5 tbsp Fish Sauce
- 1 tbsp Soy Sauce
- ½ tbsp Brown Sugar
Garnish:
- ¼ cup Parmesan Cheese + more for serving (optional)
- 1 stalk Green onion (sliced)
Instructions
- 1. Bring a pot of water to a boil for the pasta. While waiting for the water to boil, peel and mince about 20 gloves of garlic.
- 2. Combine the following ingredients in a bowl to make the noodle sauce: (½ tablespoon Chicken Powder, 1 tablespoon Garlic Powder, 1 tablespoon Oyster Sauce, 1 tablespoon Maggi, 1.5 tablespoon Fish Sauce, 1 tablespoon Soy Sauce, ½ tablespoon Brown Sugar)
- 3. Cook pasta al dente, about 1 minute less than the package's recommendation
- 4. Save ½ cup of the cooked pasta water then drain and rinse the cooked pasta under running water. Add about .5 tbsp of Olive Oil to prevent the noodles from sticking together. *Typically I do not rinse my pasta, but I found that when the pasta is not rinsed for these garlic noodles, it tends to clump together*
- 5. Heat a pan to medium/Medium low and add remaining 3 tbsp Olive oil and minced garlic. Cook the garlic about 5 minutes until fully cooked.
- 6. Add butter, and noodle sauce and bring to a simmer.
- 7. Add cooked pasta, and mix together with the sauce and top off with parmesan.
- 8. If the noodles are sticking together a bit, add 1 tbsp of the reserved pasta water until desired consistency is achieved.
- 9. Garnish with green onions and Enjoy!
