This Lasagna Soup Is Like A Warm Hug On A Cold Winter Night!
This Lasagna soup comes together in just 30 minutes and has all the flavors you love from lasagna, delivered in a warm hearty soup. For more quick and hearty soup recipes try my curry wonton soup, hot and sour soup, and corn egg soup!
While I do LOVE Lasagna, I DON'T love the multiple steps and cooking (and washing) a few different pans. Win for Lasagna Soup!
This Lasagna soup hits the spot when the craving hits for something warm and hearty, and you don't need to spend hours in the kitchen! I love how this recipe is done in just one pot, and one short and simple cook time.

You can use Lasagna Noodles for Lasagna soup, or pasta of your choice!
I used Gigli pasta from Trader Joe's which have little wavy edges that gave me all the vibes of tiny lasagna rosettes. I think these worked out perfectly for this lasagna soup recipe, but be sure not to over cook them!

Equipment
- 1 pot or
- 1 Instant Pot * Pressure cook 3 mins on high , instant release
Ingredients
- 1 lb Ground Beef or Italian Sausage ( I did half half)
- 1 box Beef Broth 32oz or 4 cups I did not use low sodium so if you are using low sodium you may need to add a little more salt or season to taste
- 1 Onion (Diced)
- 6 cloves Garlic (Minced)
- 28 oz Diced or Crushed Tomatoes canned or 2 small 14oz cans
- 8 oz Tomato Sauce
- 2 tbsps Tomato Paste
- 1 tsp Italian Seasoning
- ½ tsp Kosher Salt
- ½ tsp Black Pepper
- 1 tbsp Olive Oil
- 6-8 Lasagna Noodles broken into pieces or 1 cup of pasta * I used Trader Joe's Gigli Pasta
For the Cheese Topping
- 1 cup Ricotta Cheese or Cottage Cheese
- ½ cup Shredded Mozzarella
- ¼ cup Grated Parmesan
- ¼ tsp Kosher Salt
Garnish
- Basil
- Grated Parmesan
- Crushed Red Peppers (optional)
Instructions
For The Soup:
- Dice onions and mince garlic.
- Heat your pot or Instant pot to medium high and add oil and onions and garlic.
- Once aromatic, add in the ground meat and break apart. I used a mix of sausage and ground beef.
- Once the meat has cooked after about 3-5 minutes add in:28 oz Diced or Crushed Tomatoes canned or 2 small 14oz cans,8 oz Tomato Sauce,2 tbsps Tomato Paste,1 teaspoon Italian Seasoning,½ teaspoon Kosher Salt,½ teaspoon Black Pepper,1 box Beef Broth 32oz or 4 cups
- Make sure to scape any bits off the bottom of the pan with a spatula.
- Bring to a simmer and stir in pasta and cook according to package instructions, or cook on high in the instant pot on 3 mins, quick release.


Cheese Topping:
- While the soup is cooking, prepare the cheese topping by combining the following into a bowl: (1 cup Ricotta Cheese or Cottage Cheese, ½ cup Shredded Mozzarella, ¼ cup Grated Parmesan, ¼ teaspoon Kosher Salt)

Garnishes:
- Wash and prepare basil for garnish if using.
- Serve soup while hot and top with cheese topping, extra parmesan, basil (optional) and Red chili flakes (optional)
