This Easy One Pot Rice Cooker Meal is another one of my weeknight FAVORITES!
This easy one pot rice cooker meal requires only 5 minutes of prep! Crack open that bottle of wine, or just kick your feet up and let the rice cooker do the work.. This one pot recipe hits the spot in no time at all. For an extra hearty meal, top with a runny egg or the egg of your choice and drizzle with some Momofuku chili crunch!
What If I don't have a rice cooker to make this One Pot Rice recipe?
No worries! You don't need a rice cooker to make this one pot rice at all! The steps are just as simple without a rice cooker. After washing your rice, add all the ingredients to the pot and bring to a boil on high. Once the pot starts simmering turn down the the lowest setting on your stove and cook for 20-25 minutes. One pot meal in minutes!
Equipment
- 1 Rice Cooker or
- 1 Pan
Ingredients
Rice & Add ins
- 2 ¼ cups rice
- 2 ¼ cups water
- 1 cup corn
- 4 Chinese sausage (sliced)
- 1 cup mushrooms (sliced)
- 4 cloves garlic (minced)
- 1 onion (small)
- 2 tbsp fried shallots
For the Sauce
- 1 tbsp chicken powder or mushroom powder
- 1 tbsp sesame oil
- 1 tbsp dark soy sauce
- 2.5 tbsp oyster sauce
- 2.5 tbsp soy sauce
- 2 tbsp cooking wine
Garnish
- momofuku chili crunch
- 3 eggs
- 1 green onion (sliced)
Instructions
- 1. Wash and rinse your rice at least 3 times until the water is almost clear.
- 2. Mince garlic, chop onion, and slice green onions, mushrooms and Chinese sausage
- 3. Combine the ingredients to form the sauce: 1 tablespoon chicken powder, 1 tablespoon dark soy sauce, 2.5 tablespoon oyster sauce, 2.5 tablespoon soy sauce, 2 tablespoon cooking wine, 1 tablespoon sesame oil
- 4. Add washed rice, water, sauce mixture, and all the toppings to the rice cooker or pot: 2 ¼ cups rice, 2 ¼ cups water, 1 cup corn, 4 Chinese sausage (sliced), 1 cup mushrooms (sliced), 4 cloves garlic (minced), 2 tablespoon fried shallots, 1 onion (small)

- 5. Hit the start button on the rice cooker, or if using a pan on stove top, bring the pan to boil. Once the contents start to boil, turn down the heat to the lowest setting on the stove, and cover with a lid for 20-25 minutes.
- 6. If you are adding a cooked egg, start to prepare about 5 minutes before the rice is finished cooking.
- 7. Once the rice is done cooking, make sure to mix very well as the sauce sinks to the bottom of the pot during cooking
- 8. Garnish with green onions, eggs and Momofuku Chili Crunch if using!
