This Loco Moco is easily one of my favorite quick easy weeknight recipes.
In 30 minutes flat this Loco Moco recipe is sure to please even the pickiest of eaters. Loco Moco is a seasoned beef patty, seared to perfection over rice topped with gravy and runny egg.
This Loco Moco recipe is so easy to make, and will warm your soul with comfort every time you eat it.
A Loco loco is made of a runny egg yolk, gravy and rice. To me, these ingredients scream comfort. You can't go wrong with this Loco Moco gravy, rice and runny eggs. My kids (oldest one - The husband included) scrape their bowls every time I serve this dish.
This recipe of Loco Moco calls for 3 lbs of ground beef...
Since this loco moco is one our favorite recipes, I always make a large batch so we can save some for left overs for the next day. You can use the adjust servings on the recipe card below to reduce the amount of patties and servings.

Ingredients for Loco Moco
For the Patties:
- 3 lbs Ground Beef
- ¼ tsp Smoked Paprika
- ½ tsp Salt
- ½ tsp Pepper
- ½ tsp Onion Powder
- ½ tsp Garlic Salt
- ½ tsp Worcestershire Sauce
For the Gravy:
- ½ Onion (chopped)
- 3 tbsp Flour
- 1 tbsp Butter
- ½ tbsp Beef Bouillon
- ½ tbsp Soy Sauce - Low Sodium
- ½ tsp Onion Powder
- 1 can Beef broth (14.5oz)
For the Garnish:
- 3 cups White rice (cooked)
- 1 Stalk Green onion (garnish)
- 10 Eggs
Directions
The Loco Moco Patties:
The hardest part about making this dish is forming the patties..
But.. I have a hack for you! I used circular cookie cutters to form the hamburger patties. Its a much faster method than weighing out even portions of meat, and rolling into balls and flattening out. Yes I'm guilty of that too. This method saves a bunch of time !
- 1. Combine 3lbs ground beef with ¼ teaspoon Smoked Paprika , ½ teaspoon salt, ½ teaspoon pepper, ½ teaspoon onion powder, ½ teaspoon garlic salt, ¼ teaspoon Worcestershire Sauce . Mix well.
- 2. Form into 10 patties approx ⅓lb each. I used a round cookie cutter.
- 3. Heat up pan to medium heat , add oil.
- 4. Sear each side for 4 minutes each, season with a pinch of salt and pepper.
- 5. Once all the patties are cooked, place to the side and cover with foil.



The Rice:
- 1. Rinse rice until clear
- 2. Add to rice and equal parts water to rice cooker and cook.
The Gravy:
- 1. Add 1 teaspoon butter and onions to the pan on medium heat, do not dispose of the drippings.
- 2. Once the onions are soft add the 3tbsp flour and stir until combined.
- 3. Slowly add the beef broth and water ¼ cup at a time making sure the liquid is fully absorbed and sauce is thickened before adding more liquids. Be careful not to turn up the heat too high as the gravy can "break".
- 4. Once all the liquids are fully combined , add ½ tbsp soy sauce, ½ tbsp Beef Bouillon and ½ tsp Onion Powder and simmer on medium low for 2 minutes.
- 5. Stir and turn off heat.



The Eggs:
- 1. Oil up a new pan to medium heat
- 2. Fry eggs for 3 minutes until the edges are brown
- 3. Set aside on a plate
The Assembly:
- 1. Add rice to plate
- 2. Add patties on top of rice
- 3. Cover patties with gravy
- 3. Add eggs on top
- 4. Garnish with green onions and black pepper

Instructions
- Combine ground beef with the seasonings and mix well:¼ teaspoon Smoked Paprika, ½ teaspoon Salt, ½ teaspoon Pepper, ½ teaspoon Onion Powder , ½ teaspoon Garlic Salt, ½ teaspoon Worcestershire Sauce
- Form into 10 patties approx ⅓lb each. I used a round cookie cutter.
- Don't forget to make the rice!
- Heat up pan to medium heat , add oil.
- Sear each side for 4 minutes each, season with a pinch of salt and pepper.
- Once all the patties are cooked, place to the side and cover with foil. Add butter and onions to the pan.
- Once the onions are soft add the flour and stir until combined.
- Slowly add the beef broth and water ¼ cup at a time making sure the liquid is fully absorbed and sauce is thickened before adding more. Be careful not to turn up the heat too high as the gravy can "break".
- Once all the liquids are fully combined , add the following seasonings:
- Simmer for 2 mins and set aside
- Make sunny side up eggs
- Assemble Loco Moco : Plate rice, Hamburger patties, gravy, eggs, and green onions. Enjoy!
