These Vietnamese Pork Skewers are just like the Pork that you would find in your favorite Vietnamese Restaurant. This Pork is the star of any salad, banh mi sandwich, rice plate or vermicelli noodles.

Instructions
If you are using wooden skewers, Soak them first in water for 10-20 minutes
Let's start by preparing our garlic and shallots. Mince about 3 pieces of garlic, and 1 shallot.
I recommend using Pork Belly, or for a leaner choice pork butt. Slice into thin slices about ¼" thick. Pro Tip- If you freeze the meat for 30 minutes before slicing it will be easier to make thin cuts. You can ask your butcher to slice it for you too.
3 lbs Pork (Skinless Pork Belly or Pork Butt)
Combine the following ingredients to make the marinade. Set aside about 2.5-3tbsp of marinade for basting.
Combine the rest of the marinade with the pork and set aside for at least 10 minutes. The flavors will be even more amazing if you marinate overnight!
Air Fryer Cooking Instructions
Preheat your Air fryer to 400F and cook for 8 minutes flip and baste. After another 4 minutes at the 12 minute mark check the internal temp of the skewers. Depending on your air fryer the skewers may be ready now, or you may need a total of 15 minutes cook time. For a little extra char cook an additional 1-3 minutes. (Pork is safe to eat at 145F)
Oven Cooking Instructions
Preheat Oven to 375
Put your Pork skewers on a baking rack.
Cook for 18-20 minutes , and flip and baste halfway. For a little extra char, broil for 1-2 minutes. Watch closely for burning.
Making the Scallion oil (Optional)
Wash and slice your scallions (Green parts only) , Place into a heat safe bowl.
4 stalks Green onion
Heat up oil in a pan for about 1 minute on medium heat
⅛ cup Vegetable Oil
Carefully pour the oil over your sliced scallions, mix well
Let cool 5 minutes and add your sugar and salt
⅛ teaspoon Salt, ⅛ teaspoon Sugar
Garnish over your pork skewers
