Instructions

Blender and Food Processor Instructions

  • Add 5 cloves of garlic, Thai chili (if using), 1 teaspoon tamarind soup mix, 1 tablespoon fish sauce and 2 tablespoon water to blender or food processor and blend just for a few seconds.
  • Add 1 small handful of cilantro (about 15 sprigs) and blend for 1 second until the cilantro is just combined . Be careful not to blend into a liquid. For larger batches, I recommend roughly cutting up the cilantro before combining.

Mortar instructions

  • Add 5 cloves of garlic, Thai chili (if using), and 1 teaspoon tamarind soup mix and use the pestle to form a paste
  • Chop up about 1 small handful of cilantro (about 15 sprigs) and add the mortar. Pound until combined.
  • Lastly, add the liquids. Add 1 tablespoon fish sauce, and 2 tablespoon of water. You can add more or less until the desired consistency is reached

Notes

This sauce is best when made fresh!
